Ingredients

  • 1 cup Uncooked Rice
  • 4 cloves
  • 3 Green Cardamom Pods
  • 2 centimeters Long Cinnamon Stick
  • 2 cloves Garlic
  • 2 Shallots, thinly sliced
  • 1/2 tablespoon Olive Oil
  • 1/2 Rind of Mandarin Orange, thinly shred
  • 1 teaspoon Chicken Stock Powder
  • 100 milliliters Fresh Mandarin Orange Juice
  • 1 cup Water
  • 1 1/2 tablespoons Golden Raisin
  • 1 1/2 tablespoons Almond Flakes, lightly toasted
  • 1/2 tablespoon Sliced Spring Onion, optional

Instructions

Cook Japanese short-grain rice until sticky. Once cooled slightly, mix in a hint of orange zest. Shape the rice into triangles using wet hands. Optionally, fill with salmon or umeboshi. Wrap a strip of nori around the base and serve.
